Sustainability according to ViVi
Our approach
At ViVi, we strive to manage our operations while considering the impact a restaurant business can have on people, the local area, and the environment.
We recognize that the food service industry inevitably involves the use of energy, water, raw materials, and materials. Therefore, we are committed to progressively improving our practices and communicating them transparently.
Organic Ingredients
In many preparations we use ingredients from certified organic farming, according to European organic legislation.
Organic certification guarantees that the ingredients indicated as organic comply with the requirements set by the Regulation (EU) 2018/848, which regulates the production and control of organic foods.
Supply Chain and Suppliers
Over the years, we have developed collaborative relationships with various local suppliers and producers.
Whenever possible, we favor ingredients from local companies and businesses that adopt production practices consistent with our selection criteria, maintaining direct dialogue with the supply chains.
Waste reduction
In our premises, we adopt various practices to improve resource management and reduce food waste.
We carefully plan our food preparations every day, creatively reuse kitchen surpluses, and have launched composting and organic waste recycling initiatives.
Renewable energy
In our premises we use electricity from renewable sources according to the certifications of our energy supplier.
We have also installed photovoltaic systems in our laboratory to contribute to the production of energy from solar sources.
Community and social initiatives
Over time, ViVi promotes various initiatives, some of which are free and open to the community.
Cultural activities, charitable initiatives, and wellness projects, such as the free summer yoga program at Villa Pamphili. These initiatives are part of our company's social commitment and are implemented in collaboration with local associations, institutions, and partners.

ISO 9001:2015 – Quality Management System
This system includes procedures and organizational controls aimed at improving the management of production processes, the traceability of activities, and the monitoring of the quality of products and services offered.
This certification attests that the company has adopted a quality management system compliant with the international standard ISO 9001:2015.
ISO 14001:2015 – Environmental Management System
Through this system, the company identifies, monitors, and manages the environmental aspects of its production activities, defining improvement objectives and control procedures in compliance with applicable environmental regulations.
ISO 14001 certification certifies the adoption of an environmental management system compliant with the international standard ISO 14001.
BRCGS (Brand Reputation Compliance Global Standards)
The production plant is certified according to the BRCGS Global Standard for Food Safety, one of the main international food safety schemes.
BRCGS – Food Safety provides a framework for managing product safety, integrity, legality, and quality, as well as operational controls related to these criteria, in the food and food ingredient manufacturing, processing, and packaging industries. Click here for more information.
B Corp Certification
Since 2022, Vivi Srl Società Benefit, owner of the Borboletta brand, has been a certified B Corp company, assessed according to the social and environmental performance standards defined by B Lab.
The “B Corporation Certification” is a trademark licensed by B Lab, a private non-profit organization, to companies that, like ours, have successfully passed the B Impact Assessment (“BIA”) and therefore meet B Lab’s requirements in terms of social and environmental performance, responsibility, and transparency.
Please note that B Lab is not a conformity assessment body pursuant to Regulation (EU) No. 765/2008 or a national, European, or international standards body pursuant to Regulation (EU) No. 1025/2012. BIA criteria are distinct and independent from the harmonized standards resulting from ISO standards or other standards bodies and are not ratified by national or European public institutions.
