Traditionally, hummus is served on a large platter, usually drizzled with olive oil and herbs and accompanied by fresh pita bread, tomato, onion, cucumber salad, and perhaps some falafel.
Israelis, Palestinians, Egyptian Arabs, Greeks, and other Middle Eastern and Mediterranean countries claim hummus as their dish. Each makes it their own way. The big difference between the different types of hummus lies in the amount of cumin and tahini or sesame paste they add. Turkish hummus
Replaces butter with olive oil. And sometimes small amounts of Greek yogurt and chili pepper can be added. But hummus is almost always the
marriage of chickpeas, sesame paste, lemon juice and garlic.
Hummus is incredibly healthy. Low in saturated fat and high in fiber and protein, hummus also offers complex carbohydrates to keep you feeling satisfied and full. A fantastic example of the Mediterranean diet.
