    Sponge cake
    • Camy Cream
    • Strawberry syrup
    • Filling

    Sponge cake
  • Whisk the eggs, egg yolks, and sugar until well combined. Add the sifted flour, cornstarch, and salt, stirring from top to bottom. Line two baking sheets and spread the mixture evenly and thinly. Bake in a preheated oven at 170°C (340°F) for 8-10 minutes.
    • Camy Cream
  • Place all the ingredients in a stand mixer (or electric whisk) and mix until you obtain a thick, firm mixture.
    • Strawberry Bath
  • Bring the water, sugar, and strawberries to a boil. Let it cool and add rum to taste.
    • Assembly
  • Cut the sponge cake into 5 cm diameter discs and soak them in the strawberry syrup (set aside the sponge cake scraps for decoration). In silicone molds, start with a first layer of Camy cream. Arrange the diced strawberries on top. Proceed with the first sponge cake disc. Repeat the above steps. Freeze the individual portions for at least 24 hours. Then, unmold and decorate as desired with fresh strawberries and sponge cake crumbs.
