Welcome to our fascinating journey into the world of wine! ViVi – Le Serre, in collaboration with the Italian Chef Academy, presents a series of 6 meetings dedicated to introducing you to wine.

During these sessions, we will deepen our knowledge of wine and tasting techniques, with a particular focus on organic and sustainable production. The course offers a unique experience in which we will explore the culture, history, and art of wine production and appreciation. You will learn how to masterfully pair wine with food, transforming every meal into an unforgettable culinary experience. The course is suitable for both beginners and wine enthusiasts, offering an inclusive and fun approach to learning through interactive lectures, guided tastings, and meetings with local producers.

October – November 2024

2nd CYCLE 2024: COURSE ON WINE TASTING TECHNIQUES AND KNOWLEDGE

The course aims to provide the basic tools for a thorough understanding of wine, also analyzing the key topics for the best technical and sensory approach to the beverage. In collaboration with Fabio Turchetti, a food and wine teacher and journalist, the program will be divided into eight sessions lasting approximately two hours, each featuring a tasting of four wines related to the evening's specific theme.   

1. WINE AND THE VINE: HISTORICAL NOTES –
October 14, 2024, 7:00-9:00 PM

Characteristics and elements of the vine and quality viticulture.
Tasting technique: visual, olfactory and gustatory examination.

2. VINIFICATION AND REFINING –
October 21, 2024, 7:00-9:00 PM

Study of the winemaking process: alcoholic fermentation, differences between white and red winemaking, aging in wood until bottling.

3. SPARKLING WINE MAKING –
October 28, 2024, 7:00-9:00 PM

The production of sparkling wines: different types, characteristics, and production methods.

4. DESSERT WINES –
November 4, 2024, 7:00-9:00 PM

Sweet, straw, botrytized, and fortified wines: types, characteristics, and pairing techniques.  

5. VINES AND GRAPE VARIETIES OF ITALY –
November 11, 2024, 7:00-9:00 PM

National enography: the main Italian grape varieties and notes on international varieties. How to read a wine label.

6. THE PAIRING –
November 18, 2024, 7:00-9:00 PM

Basic food and wine pairing principles and a practical demonstration with cross-tasting of three gastronomic options and three wines.

Conclusion with the delivery of certificates of participation
to our Wine Introduction course
and Tasting Techniques for all participants and a farewell aperitif.

7. ITALIAN EXCELLENCE –

Focus on cured meats and cheeses: traditions, production methods, tasting techniques, and recommended pairings.

8. OLIVE OIL & BALSAMIC VINEGAR –
December 2, 2024, 7:00-9:00 PM

A focus on two of our culinary highlights: olive oil and balsamic vinegar. Qualitative characteristics, production methods, tasting techniques, and recommended pairings.
